🔍 When is it ripe?
Long, leathery pods turn from green to dark brown and dry on the tree. Ripe when completely dark brown, hard, and fragrant with a chocolate-like smell. Eat the pods (not the seeds) — naturally very sweet.
Carob Tree (Ceratonia siliqua). There are in fact several Carob Trees in the vicinity. They produce a bounty of delicious sweet edible pods. If you are not a good climber, take a step ladder for harvesting.
