🔍 When is it ripe?
Leaves and stems edible from spring through summer; seeds harvest in September–October when they turn grey-green and start to fall. Cut seed heads into paper bags and hang to dry. Pollen (June–July) is intensely flavoured — shake flowers over food.
Three large fennel plants, in vigorous good health. Abundant fresh fennel in spring and summer, and fennel seeds in winter. On parking strip/ city right of way, but cared for by adjacent apartment building management (trimmed every fall).
