🔍 When is it ripe?
Clusters of deep purple-black berries; cut entire clusters. Never eat raw — cook thoroughly (destroys sambunigrin). Ripe when all berries on the cluster are uniformly dark and the cluster droops. High in antioxidants; excellent syrup.
Lots of insects like to hide in these elderflower umbels. They're not going to make you sick or anything, but some people prefer not to have bugs in their elderflower cordial. Give them a single vigorous shake to get them off (any more and you'll lose the pollen, which is where the flavour is).
