🔍 When is it ripe?
Green in October (oil forming), turning purple-black November–December. Harvest for oil when 50% black; for table olives, pick to match intended colour. Must be cured in brine or lye — extremely bitter raw.
While these are edible olive trees (leaves, etc.) - this is a respected area due to it being a veteran's memorial. It is best to be considerate of the meaning of the place in regards to eating the olive trees here.
