🔍 When is it ripe?
Harvest time depends on intended use: green olives (October, firm, very bitter — require curing); turning olives (November, red-purple, half-ripe — for oil or eating); black olives (December, fully ripe, shrivelling — sweeter, for oil). All must be cured before eating — never eat straight from the tree.
Olive trees line Briggs Ave and Los Olivos St (Which means The Olives in Spanish). These houses were build where an old olive orchard once was. The trees overhang public land, so much so that when the olives over ripen and fall from the trees they turn the street black when cars drive over them.
