🔍 When is it ripe?
Ripe dates turn from yellow (khalal stage — crunchy, slightly tart) to amber-brown (rutab — soft and sweet) to dark and wrinkled (tamr). Harvest large clusters of rutab-stage dates when they turn caramel colour and yield to pressure.
