While the bulbs are in season all year, they're best in early spring, when the leaves have just appeared and the bulbs are sweet and crisp. They are at their worst in mid spring, and they go dormant in early June, when the bulbs become better but starchy rather than sweet. After that, they're hard to find. The leaves are sweet on top but bitter on the bottom.
