🌳
Cattail
📍 In the pond all along the shoreline.
🗓 Season: May · June · July
🔍 When is it ripe?
Multiple edible parts across the season: young shoots (spring), green flower spikes (May–June, boil like corn), yellow pollen (June–July, shake into a bag), and starchy root (year-round). Green spikes are ripe when fully formed but still bright green.
Cattails are growing somewhat densely and healthily all along the shoreline. They honestly might need to be trimmed back in a year or two unless some are gleaned here and there. Because the pond has no natural outlet that can be seen, I'm not sure that the plants have a natural way of migrating away from the site, so they keep reproducing in the same spot.
