🔍 When is it ripe?
Hawthorn: Deep red haws (berries) develop from green. Ripe when dark red and slightly soft. Edible raw but mealy — better for haw jelly, syrup, or wine. Contains a large stone. Improve after first frost.
Sea-buckthorn: Dense clusters of vivid orange berries, intensely sour. Ripe when bright orange and yields to gentle pressure. High in vitamins C, E, and omega-7. Harvest by cutting entire branches and freezing, then shaking frozen berries loose.
Sweet chestnut: European chestnuts: burs split on the tree in September–October. Collect from the ground daily. Cook before eating — roast, boil, or dry and grind. Score the flat side before roasting to prevent explosion.
