Leaves from this tree can be used to make a refreshing tea simply by steeping the leaves with boiling water. Very Freshing, especially with rosehips. AVAILABLE ALL YEAR Pollen Cones edible raw or cooked but save them so they can shed pollen which is more valuable. This pollen is also edible raw or cooked and is a Plant based source of Vitamin D. To harvest simply pick cluster off by hand, then put them on parchment paper to shed pollen. Then scoop all the pollen into a jar and store in freezer. POLLEN AVAILABLE IN Early MAY, but best time to harvest is in early May before just pollen sheds so you can get a lot.
