🔍 When is it ripe?
Multiple edible parts across the season: young shoots (spring), green flower spikes (May–June, boil like corn), yellow pollen (June–July, shake into a bag), and starchy root (year-round). Green spikes are ripe when fully formed but still bright green.
Long line of Cattails between highways. These cattails grow here every year. Be aware that these are right next to a highway and are subject to water runoff. Not sure how healthy that would be or the legality of harvesting in this area.
