🔍 When is it ripe?
Blue-black berries in flat clusters; cook before eating. Ripe when uniformly dark blue-black and heavy. Also note: elderflowers in June are edible raw and excellent for cordial.
Several elderberry shrubs grow in this vicinity along Grindstone Creek. The blossoms can be made into fritters are steeped in oil or vinegar for their medicinal properties. The fruit can be gathered by the umbel and so great quantities can be acquired quickly. The berries are great for fresh or baked, cooked or preserved. Shrubs are very easy to propagate from dormant hardwood cuttings (with a heel) that are between 8-12'' inches long are best and planted half of their length into moist, fertile soil. Keep well watered and protected for their first winter. Prefers moist soils that don't dry out in summer.
