🔍 When is it ripe?
Green in October (oil forming), turning purple-black November–December. Harvest for oil when 50% black; for table olives, pick to match intended colour. Must be cured in brine or lye — extremely bitter raw.
These are mission olives. They can be picked when green or when ripe. They have bugs and so most olive production no longer exists in Rancho Cucamonga and Ontario anymore - it moved. The seeds are collectible if they're of any use. That said the leaves aren't buggy (unless a bug decided to make a home there) - so that's able to be picked. Olive leaves are very edible - with the phytochemicals of olives but without the fat. Make it into tea or infused water. The trees are all over the parking lot from where you get out onto day creek by baseline all the way to the exit to day creek by church to the back of Sprouts.
