Cattail · Golden currant

CattailGolden currant Public
🗓 Season: May · June · July
🔍 When is it ripe?
Multiple edible parts across the season: young shoots (spring), green flower spikes (May–June, boil like corn), yellow pollen (June–July, shake into a bag), and starchy root (year-round). Green spikes are ripe when fully formed but still bright green.
There are a number of golden currants around the pond. This is a great cattail patch as well. Currant season is mainly in August. Cattails, though, can be harvested throughout the year: the young shoots in Spring, Pollen in Early Summer, and roots into the fall.
