🔍 When is it ripe?
Background skin colour shifts from green toward yellow; seeds turn brown when ripe. Fruit separates from the spur with a gentle upward twist. Aroma develops near the base. Wild Malus fruit is often small and tart — excellent for cider and jelly.

Variété semblable aux groins de veau, anciennement répandue à St Bernard. Il n’en reste qu’un très vieil arbre centenaire. Ses pommes du plateau étaient auparavant vendues à Grenoble sur les marchés. Ses fruits jaunes citron et lisses en forme de groin de veau sont mûrs en novembre et se conservent jusque mars, bien qu’ils soient meilleurs fraichement cueillis : à la longue ils deviennent huileux puis farineux. La chaire dégage une légère odeur de coing.
