🔍 When is it ripe?
Harvest time depends on intended use: green olives (October, firm, very bitter — require curing); turning olives (November, red-purple, half-ripe — for oil or eating); black olives (December, fully ripe, shrivelling — sweeter, for oil). All must be cured before eating — never eat straight from the tree.
Lots of olive trees around the lake near the swim beach area. Fruit appears to be green right now in August, will continue to ripen and turn black in the fall. Olives are inedible off the tree, so keep in mind you will have to brine them after foraging.
