🔍 When is it ripe?
Multiple edible parts across the season: young shoots (spring), green flower spikes (May–June, boil like corn), yellow pollen (June–July, shake into a bag), and starchy root (year-round). Green spikes are ripe when fully formed but still bright green.
When harvesting the rhizomes, go for the plants on the perimeter of the patch, and dig for the rhizomes that aren’t connecting one plant to another. Avoid harvesting adjacent to roads, or areas with lots of fertilizer or pesticides. Aim to harvest the older plants, to allow the young ones opportunity to grow.
