🔍 When is it ripe?
American linden: Fragrant white-yellow flowers in June–July. Harvest when open for linden tea. Very fragrant; also used for honey production.
Blackberry (Rubus fruticosus): Deep black and pulls free with zero resistance. Juicy and sweet; no red remaining at the core. Harvest in the morning when cool.
Japanese knotweed: Harvest young red-tinged shoots in early spring when under 30 cm tall. Tastes like rhubarb — very tart; high in oxalic acid. Cook before eating. Excellent for crumbles and jam. Highly invasive — harvesting actively helps control it.
Raspberry: Deep red (or gold/yellow for golden varieties) and slides off the receptacle — the hollow centre is the tell. Does not pull: a ripe raspberry separates at a touch. Extremely fragile; use within hours of picking.
Small-leaved linden: Flowers: pale yellow clusters appear June–July. Harvest when just opening for the best flavour and scent; dry quickly to prevent fermentation. Excellent for linden-flower tea (tilleul). Young leaves (May) are edible raw in salads.
