🔍 When is it ripe?
Harvest when the green husk turns yellow-green and the nut falls naturally or can be shaken loose. Wear gloves — the husk stains permanently. Remove husk immediately, then cure nuts in a cool, airy place for 2–3 weeks before cracking. Intensely flavoured.
Large, healthy tree that usually produces a prolific crop of nuts every second year followed by a lean year. This is a natural tendency of this species, and occasionally worthwhile crops are only produced every 3rd year. Factors such as late frosts and particularly cold winters can also adversely impact production.
There are several black walnut trees that border this creek and as well other individuals found throughout Battlefield Park. They also occur in natural stands in the forest directly south of the manicured part of the property.
Nuts have very thick shells but the kernels are oily and sweet. They benefit from being aged over the winter in an insulated garage, cold room or root cellar. The ripe hulls of the nuts (which must be removed prior to storage) can be used for dying and well as making ink.
