🔍 When is it ripe?
American persimmon: Must be fully ripe (very soft, almost jelly-like) before eating. Harvest after first frost or when naturally falling. Dark orange to purple when ready. Rich, caramel-sweet flavour.
Common fig (Ficus carica 'Beer's Black'): Dark purple-black variety. Ripe when the skin is very dark, fruit droops, and feels soft throughout. Very sweet — harvest promptly as they attract wasps and birds.
Lime: Persian limes are harvested green and mature green; Key limes turn slightly yellow when fully ripe and very juicy. Heavy for its size and yields to light pressure. Green limes are still at peak acidity and fully usable.
