🔍 When is it ripe?
Deep red haws (berries) develop from green. Ripe when dark red and slightly soft. Edible raw but mealy — better for haw jelly, syrup, or wine. Contains a large stone. Improve after first frost.
Unclear which variety of Hawthorne (there are dozens in the US alone). Bears fruit in late fall. Berries still on the tree well into winter after leaves have fallen.
