🔍 When is it ripe?
Harvest young red-tinged shoots in early spring when under 30 cm tall. Tastes like rhubarb — very tart; high in oxalic acid. Cook before eating. Excellent for crumbles and jam. Highly invasive — harvesting actively helps control it.
Easy to park near and find (north of the kayaks, next to the Charles River). Plants are focused in one location, a few yard stretch south west of the parking lot. Looks to be have been there for longer than 1-2 years. Tallest shoots observed late May 2021 are 6-8 feet tall, shortest are a foot.
