🔍 When is it ripe?
Long, leathery pods turn from green to dark brown and dry on the tree. Ripe when completely dark brown, hard, and fragrant with a chocolate-like smell. Eat the pods (not the seeds) — naturally very sweet.
Two carob trees are in the parking lot of this strip mall. I spotted the carob in the middle of the road. It is just going to waste here with cars running over it. It's August right now and these trees have TONS of fruit. I'm not sure how long the season is for these guys, but right now the trees are overflowing with pods.
