Black locust

π When is it ripe?
Flowers (white, fragrant clusters) are edible in May and can be eaten raw, fried in batter, or made into syrup. The seeds and green pods are toxic β do not eat. Harvest flowers only.
The (invasive) Black Locust is also all through town, but there is a nice little grove of smallish trees here. A lot about the Black Locust is toxic, (which is why the wood lasts as long as teak when used in outdoor applications) but the white blossoms in the spring are edible and delicious fresh. Put them in salads, or even use them to garnish a fresh asparagus soup. The flavor is reminiscent of the jasmine in a good jasmine tea. The blossom season isn't long, but the blossoms do store a couple of days in the fridge.
