🔍 When is it ripe?
Long, leathery pods turn from green to dark brown and dry on the tree. Ripe when completely dark brown, hard, and fragrant with a chocolate-like smell. Eat the pods (not the seeds) — naturally very sweet.

The carob pods drop to the ground and are scattered around the trees.
Pods are edible when dark brown and mostly dried out. Inspect for ants and insects. Do not climb or pick from the trees.
