Chanterelles are orange mushrooms that pop up from the soil (not on rotting wood!) usually a day or two after a good July rain and are smooth or ridged under the cap (no gills!). They have an chicken-like texture when broken up into a skillet with butter or oil, and provide protein and vitamin C.
