Cattail
📍 G9CH+5W Phoenix, MD, USA
🗓 Season: May · June · July
🔍 When is it ripe?
Multiple edible parts across the season: young shoots (spring), green flower spikes (May–June, boil like corn), yellow pollen (June–July, shake into a bag), and starchy root (year-round). Green spikes are ripe when fully formed but still bright green.
Just past the first left after the one-lane bridge there is a place to park and walk to the stream. I believe I have also seen what looks like wild rice in addition to the cattails but someone with more expertise would have to confirm. There are trout in the stream as well
