🔍 When is it ripe?
Multiple edible parts across the season: young shoots (spring), green flower spikes (May–June, boil like corn), yellow pollen (June–July, shake into a bag), and starchy root (year-round). Green spikes are ripe when fully formed but still bright green.
Lots of cattails in the ditches to both sides of the highway, from around where 480 crosses the 80 toll road out west to at least the Oberlin (rt 58) exit, likely past that as well.
There's some occasional elderberries as well but didn't get exact locations for them, and no large patches.
