🔍 When is it ripe?
Harvest time depends on intended use: green olives (October, firm, very bitter — require curing); turning olives (November, red-purple, half-ripe — for oil or eating); black olives (December, fully ripe, shrivelling — sweeter, for oil). All must be cured before eating — never eat straight from the tree.
Very mature olive trees down the middle and sides of the Main Street in this little township. Some are so thick at the base they could be several hundred years old. I did not stop to see the yield but with so many trees there should be no problem picking any quantity you need if you are ever passing through.
