🔍 When is it ripe?
Harvest leaves just before flowering for peak flavour. Cut stems back by a third regularly to encourage bushy growth. Flavour declines after flowering — cut flower spikes off to extend harvest.
I don't know exactly where to place the marker. In the big field around the bend and up past the old house, there is a little clearing with a tiny stream running through it. This was positively full of mint, growing on the ground and in the water. It smelled so good!
