🔍 When is it ripe?
Leaves and stems edible from spring through summer; seeds harvest in September–October when they turn grey-green and start to fall. Cut seed heads into paper bags and hang to dry. Pollen (June–July) is intensely flavoured — shake flowers over food.
Public sidewalk and in front of property. The owner'is happy to share. Slightly sweet and better than the store-bought because of its wonderful aroma which goes so well in Italian dishes. All parts are edible. Withered up in September.
Feel free to pluck any part to eat, or uproot some young trees to plant.
