🔍 When is it ripe?
Multiple edible parts across the season: young shoots (spring), green flower spikes (May–June, boil like corn), yellow pollen (June–July, shake into a bag), and starchy root (year-round). Green spikes are ripe when fully formed but still bright green.
Decent sized bunch of cattails grown in this area. These great plants were once called Nature's supermarket, as they have edible parts year-round. There are other places around where you can find them growing too, but I am pretty sure these are the cleanest. I just park on the side of 40 and walk over with my waders and dive in. That said, cattail marshes are an important place for many species of wildlife and they perform a critical job in the ecosystem. While there really are a bunch of them growing here, spreading them to other places is difficult because wetlands are kind of in short supply these days....
