🔍 When is it ripe?
Very large, deep red hips — best of all roses for food. Ripe when deep red and slightly soft. Sweet and very high in vitamin C. Slice off top and bottom, remove seeds before using.
There are a whole bunch of Rugosa roses planted here, as well as elsewhere in Battlefield park, such as directly south of this location surrounding the Battlefield House Museum. The flowers of these roses are edible, but of particular interest are the large, fleshy hips which are very sweet and succulent. The inner 'core' of the fruit, which contains many seeds, should not be eaten out of hand but can be dried and then powdered in a blender, mortar or food mill and used as a vitamin E supplement and added to pancakes, cookies, bread, porridge etc. The young shoots or suckers in early spring (before the spines harden), those growing directly from the ground and originating from the root mass, can be cut just below the soil line and prepared like any tender spring vegetable such as asparagus.
