🔍 When is it ripe?
Currant: Red: translucent, jewel-like clusters. White: pale cream. Both are ripe when fully coloured and hang as a bunch. Tart and high in pectin — best for jelly and summer pudding. Harvest the whole strig.
Hawthorn: Deep red haws (berries) develop from green. Ripe when dark red and slightly soft. Edible raw but mealy — better for haw jelly, syrup, or wine. Contains a large stone. Improve after first frost.
