Pignut hickory · Shagbark hickory

Pignut hickoryShagbark hickory
🗓 Season: September · October
🔍 When is it ripe?
Thick green husk splits into four sections when ripe. Nuts fall; gather from the ground. Rich, sweet, buttery flavour — worth the effort of cracking the very hard shell. Dry for 2–3 weeks.
Probably some other hickory varieties as well. There's more shagbarks as you go north from here, as well as others scattered around park edge.
