🔍 When is it ripe?
Long, leathery pods turn from green to dark brown and dry on the tree. Ripe when completely dark brown, hard, and fragrant with a chocolate-like smell. Eat the pods (not the seeds) — naturally very sweet.
The CalArts parking lot is shaded by dozens of carob trees. I've harvested a lot of fallen carob without a problem. They're ripe right now, just pop by and say you're there to check out the campus or a Thursday Night opening.
