🔍 When is it ripe?
Green in October (oil forming), turning purple-black November–December. Harvest for oil when 50% black; for table olives, pick to match intended colour. Must be cured in brine or lye — extremely bitter raw.
These seem to be mission olives. They can be picked when green or when ripe. They have bugs (if you place the olives in a bag - after a few weeks the olive flies will pop their head out creepily) and so most olive growing no longer exists in Rancho Cucamonga and Ontario anymore - it moved. However, they still process shipments of olives from far off places in these cities - like at the graber olive house. The seeds are collectible if they're of any use. That said the leaves aren't buggy (unless a bug decided to make a home there) - so that's able to be picked. Olive leaves are very edible - with the phytochemicals of olives but without the fat. Make it into tea or infused water.
