🔍 When is it ripe?
Harvest young red-tinged shoots in early spring when under 30 cm tall. Tastes like rhubarb — very tart; high in oxalic acid. Cook before eating. Excellent for crumbles and jam. Highly invasive — harvesting actively helps control it.
Thick patch of Japanese Knotweed, accessible from the greenway. It gets mowed down on occasion.
Harvest the tender, young shoots before the leaves are fully formed in mid spring. They should snap off with a sudden pop without the use of a knife. They taste sour like rhubarb or dock. You can peel the the bitter skin to make them more palatable. Can be eaten raw, dipped in sugar like rhubarb, or used as a tangy vegetable, cooked up in a stir fry for example. Makes good soup!
Be careful with how you discard leftover parts, it can root from a small piece of cut stem and start a new invasive colony.
