blue agave is known for its nectar on store shelves (which comes from tapping the sap of a flower stalk before the plant dies - expiring all of its resources into the stalk, along with the edible flowers), along with a wide variety of other uses.
The leaves are edible - although they look and taste like aloe - many websites say to cook them to avoid the oxalates in them. Some websites say you can eat the leaves raw (along with boiled or dried - like for a tea), because of the high calcium in the plant (of which decreases the oxalate absorption). If you're unsure about eating it raw - then don't, but personally I know what my choice is - that this one is edible raw without worry (other agave species might not be and that's why they are worried. These are spiky, large, and dry - but the large leaves and spread means you have a chance of a good harvest). The flowers are edible raw.
