Cow parsnip
π 2331 Lakeshore Road, Grafton, Wisconsin
This has to be the most underrated wild edible ever.
The flower and leaf stalks, which are the best part, are in season in May, the roots from September-April, the flower buds from May-June, the seeds from July-September, and the hairy leaves from April-November.
