🔍 When is it ripe?
Quince: Yellow, fragrant, and very hard when ripe — not soft like apples. Look for a deep golden-yellow colour and a strong quince aroma. Inedible raw (very astringent); excellent for jam, paste, and jelly after cooking.
Rowan: Bright orange-red berry clusters. Intensely bitter raw due to parasorbic acid — cook or freeze before eating. Excellent for rowan jelly (traditional with game). Ripe when fully orange-red and slightly soft.
