🔍 When is it ripe?
Two types: astringent (Hachiya — must be very soft before eating) and non-astringent (Fuyu — eaten crisp). Both are orange when ripe. Hachiya: ripe when feels like a water balloon. Fuyu: ripe when orange, firm, and sweet even when crisp.
Tree in the backyard of the Casa del Pellegrino, a community-led hostel for pilgrims traveling the Via Francigena. They are happy to share their persimmons, which otherwise fall splat into the yard when ripe.
